PEAR AND CINNAMON CRUMBLE

Recipe

This comforting crumble is exactly what you need on a cold winter's day.

SERVES 8

FOR THE FRUIT

6 ripe pears, peeled, cored and cut into eighths

25ml maple syrup

zest and juice of one unwaxed lemon

1 tsp vanilla extract

2 tsp cinnamon


FOR THE CRUMBLE

60g ground almonds

60g flour

60g rolled oats

40g brown sugar

60g butter, melted

1 tsp cinnamon

1 tsp fresh rosemary leaves, very finely chopped

pinch sea salt


  1. Preheat the oven to 180ºC fan bake.
  2. Place the sliced pears and maple syrup in a saucepan and cook gently until the fruit begins to soften, approximately 15 minutes.
  3. Place the fruit in an ovenproof dish and mix in the remaining filling ingredients.
  4. Meanwhile, make the crumble: place all ingredients into the bowl of an electric mixer, and combine until a coarse breadcrumb-like texture is reached.
  5. Sprinkle the crumble evenly over the fruit.
  6. Bake for approximately 30 minutes or until the crumble starts to look golden on top.
  7. Serve warm with custard or Greek yoghurt.
  8. To store, cover well with plastic wrap and keep in the fridge for up to a week.
